Susanne's Rouladen

Rouladen or Rinderrouladen is a quintessential German meat dish made with bacon, onions and pickles wrapped in thinly sliced beef. The gravy is an absolute requirement to round out this dish.  It is usually served with boiled potatoes, potato dumplings, or Spätzle (depending on the region). I like red cabbage with my Rouladen, but you can serve it with any vegetable you like. The dish was once considered a recipe for common folk, but today it is enjoyed by many people as a festive dish or a special Sunday meal. Imagine braised meat flavored with mustard, pickles, prosciutto, enhanced by a rich gravy. If you like that, than Rouladen is the dish for you.

My love affair with Rouladen began here in the United States when Susanne, my friend and neighbor and an excellent cook, started making it for me. This dish is the best cure when I get homesick for Germany. It’s like soul food imbedded into my DNA. It’s not fancy or delicate, but homey and nourishing. I can’t wait to sit at Susanne’s inviting table and start eating. 
There are many recipes for Rinderroulden (beef roll-ups), but I enjoy Susanne’s the best. She uses thinly sliced prosciutto that she buys at Trader Joe’s (instead of bacon) as well as cornichons (gherkin pickles). The butcher slices a piece of London broil into 1/8 inch thin slices. I find that this dish develops more flavor when made a day ahead.

My recipe for red cabbage ( here is the link for the recipe) goes well with Rouladen. Susanne serves boiled potatoes that she flavors with melted butter and parsley. Thank you Susanne, for being my friend and taking care of me for so many years.

Gerlinde, indeed your Rouladen sounds like a very special dish! I could imagine each texture and flavor as you described it. Then you showed us the entire beautiful meal. I think my stomach is growling now... ;)

Hi Gerlinde, your Rouladen sounds wonderful, the flavors and textures must make this dish very special. I would of never thought to ask the butcher to slice London broil that way, I bet this is delicious. Take care!

I think people use different types of meat for this dish. Susanne likes London broil. I don't know much about beef. My husband is the expert. He likes steak and I prefer braised meat.

I have had some bad Rouladen in Germany. Some people put big pieces of fattty speck ( bacon) in the meat. You are a great cook Tricia, you could make this.

Ah..Rouladen!! My Mammie used to make these every New Year's Eve just like you show. And herring salad for good luck. Now my mouth is watering. These freeze well, too....make plenty! Thank you for reminding me.

Oh, how I remember herring salad. My mother loved Rouladen, but I don't remember her cooking them. When I visited my mom in her later years I used to buy Rouladen in a jar that a local butcher made. They were pretty good and all my mom had to do is heat them up after I left.

I have never had rouladen, but my friend Bob talks about it all the time. It's one of his favorite comfort dishes. I need to try this, Gerlinde - it looks quite wonderful!

Ganz bestimmt die Rouladen waren immer wilkommen! Yes, I too was brought up on them regularly, usually with 'kartoffelpuree und saure Kurken' methinks :) ! Perchance a wee bit retro but that is the nouveau cuisine of today and let's go . . .

Rouladen are not on top of the list in restaurants these days. I have to look for them when I go back to Germany. Some good butcher shops, like the one in my home town, will make them and sell them in jars. The way you can buy choucroute , duck confit or pâté in France. When you go to Germany go into a butcher shop and look at all of the goodies they sell in cans and jars. I always bring some back in my suitcase.

I belong to an international club of women in Philadelphia where we have many German members. We often get together for potlucks and I have enjoyed rouladen there but never tried to make it myself. Thank you for the recipe!

Ah, Rindsrouladen mit Kohl usw. gefüllt. Meine Kusine in Deutschland machte das Gericht ganz besonders für mich wann immer ich sie besuchte. Ich weiss nicht recht, welches Stück vom Rind ich dafür brauche; vielleicht frage ich mal meinen engl. Metzger. Wüsstest du vielleicht ob beef olives ähnlich sind?

Ich glaube Friko Du meinst Kohlrouladen, die sind meistens mit Gehacktes gefüllt. Ich mag sie sehr gerne und werde sie irgendwann mal posten. Es ist mehr Arbeit als die Rindsrouladen. Für die Rindsrouladen habe ich mir hier in den USA von dem Metzger London Broil in dünne Scheiben schneiden lassen. Ich hoffe das hilft Dir In England.
