Waikiki and Summer Salads

Waikiki
You all know the special love I feel for the Hawaiian Islands, with their turquoise warm Pacific Ocean and beautiful beaches. From my home in California the islands are within a relatively  easy reach. You still have to get on a plane, but for less than five hours, which is enough time for a good read and a little snooze. My goal is to post about all the islands I have visited over the last 30 years. Click here to continue reading about my trip to Wakiki and some new eating places I discovered.

Farro Salad

Potato Salad
I am making my German-American green bean and potato salad for an upcoming party. It's a tasty salad made with a warm oil and vinegar dressing. I like to serve this salad with baked salmon and  romesco sauce on the side. Click here for the recipe
Chinese Noodle Salad
This is one of my favorite salads that I have made for many years. If green asparagus is no longer available, you can use roasted eggplant. The recipe is from the original  Greens cook book from the restaurant of the same name in San Francisco's historic Ford Mason. It has pioneered vegetarian cooking since the 1970s. I love it. It's a real treat and so is this salad. Click here for the recipe.

Gerlinde - summer salads are the best, especially when the weather is as hot as it is here in the desert! I have never been to Honolulu - only the Big Island. Can’t wait to try this wonderful fusion salad!

I hope you stay cool David. Honolulu is a large city and a mix of so many different cultures. My favorite island is Kauai.

Hi Gerlinde,
With the temperatures climbing well above the 100 degree mark for the next few days here, these lovely dishes are a true blessing. Your green bean and potato salad makes a beautiful plate and looks yummy. As for the ocean and beaches... sigh... bliss.

I've never been to Hawaii as it is such a long flight from here. You are lucky to be able to reach it in only 4 hours. Such a beautiful place. Love your summer salads. So pretty and refreshing with this heat.

It's been (literally 2/3 of a lifetime since I've been to Waikiki! Way too long. I have made it to the big island in the past few years and may go again this winter. Which is the perfect time for summer salads! GREG

Oh, I love summer salads! We are planning a picnic with friends this coming weekend, and it's really just an excuse to make a bunch of summer salads. Well, that and burgers, of course! :-) And thanks for the Waikiki photos...I've never been, but I want to visit for sure!

When the summer heat arrives in Florida, I'm very happy having a salad every day. Your German potato and green bean salad would be great with some simple grilled chicken.

Ah, Hawaii. I've never been to Waikiki - we've been to the other island, with Kauai our favorite. We actually eloped to Maui 36 years ago,and the islands are where my husband's soul lives. Me, not so much. Beautiful place, of course, but we've been so many times I've been working on getting him elsewhere in warm climates. Sitting in the sun is not my favorite thing to do, and we've nearly killed ourselves multiple times hiking on muddy slopes in Kauai!!! Love your post.

I actually didn't know about your love of Hawaii, but now I do! And I do understand it. I was there many, many years ago, when I was still in high school, but the memories are still fresh. It's a magical place.

We've taken two trips to Hawaii, but it's been at least 15 years since we stayed in Oahu. Might be time to go back. Thanks for the dreamy salad recipes---I'm definitely in a rut, LOL!
