Apricot Raspberry /Blueberry Cobbler

A  fruity summer treat

The man in my life loves cobbler, because that's what his mother always made. (His sister is still working on their mother's recipe.) My husband thinks she used Bisquick mix. As I'd rather not use the mix, I'm still trying to recreate Bisquick. So, let me know about any recipes you have. My topping is different (so my husband informs me) — softer and more flaky, like a cake.  He likes his crunchier—like a biscuit—my brother-in-law says. Both of them had second helpings, so I guess they liked it. I served mine with vanilla and my homemade strawberry ice cream.
For the filling, I used apricots and raspberries, because that's what we brought up to our mountain cabin in the Sierras, and they needed to be used right away. I love cooking up there because if you don't plan ahead, you make do with what you have. But the original recipe  from the Cooking Light Magazine called for peaches and blueberries. I made the cobbler a second time at home with blueberries apricots (the one you see in the picture). There is an old-fashioned grocery store up in the Sierras that has almost everything—but no fancy stuff and not much fruit. However, you can find all the plumbing supplies you need and cans of nearly everything. I have to admit, the plumbing and electrical items come in very handy. Our little cabin in the woods  has been my place to recharge and reboot for many years.

This looks so delectable! I love apricots, and it is the next tree we plan to add to our orchard.

I never use any sort of box mix either, and Bisquick has a funny texture that really weirds me out. But Bisquick is overall a biscuit mix, which means it has flour, shortening, salt and leavening. For cobblers, I make basically a buttermilk biscuit, but more short, which means more butter, and more sweet. Then I sprinkle the top with a coarse sugar, which ups the crunch factor. it may take a few tries, but I think it would be enjoyable research :)

Thank you for your tips, it is something I will try next. I love apricots , my favorite desert are apricot dumplings, ( an Austrian desert) you need a special cheese called Quark. The Wednesday chef has a good recipe.

My mom always used Bisquick too! There are many recipes for making your own baking mix but I'm convinced that the shortening in the mix is something we are unable to re-create at home.... Your cobbler is so inviting! The sweet, juicy fruit is just lush!

I think your right Deb, my husband likes his toppings dry, crumbly, and that's what the Bisquick mix does. I like my topping soft like a cake. I'll have to make him a cobbler using Bisquick . He deserves it. Thanks for your kind comment.

Hi Gerlinde! I'm glad you shared this on Facebook, because I missed this post back when.
I love apricots. However, I didn't grow up with them, so I don't think to look for them now. So I don't have them often enough. This looks absolutely delicious!
I hope you are enjoying lovely weather at the Sunny Cove! Are you still doing the docent work?
