Apricot Bliss and  Roasted Apricot Sorbet

Those of you who follow my blog know I love apricots. I love to bake with them, make dumplings with them, and my apricot jam is an all-time favorite among my friends and family.  The year is 2018 and it has been apricot season for several weeks here in northern California. My friend at the farmer’s market sold me some delicious apricots. But not a whole crate like I used to get from a fruit stand in the Central Valley of California. But it was enough to have a week of apricot bliss. 
Apricot Sorbet
My goal is to add a new apricot recipe to my blog every year. Originally, I had planed to make an Italian roasted apricot ice cream recipe I saw in a magazine called  La Cucina Italiana. Unfortunately, I can't find the recipe. This is one of the reasons I have my blog, so that I always have access to my favorite recipes. I think of it as my own personal cookbook. I do like the apricot sorbet I am posting now. It’s easy to make and captures the flavor of apricots in a delicious way. Like most of my desserts, it is not too sweet, but the fruity tart flavor is a great substitute for the lack of sweetness. The apricots are roasted whole and the extra dried apricots contribute more flavor and sweetness.
Apricot Sorbet
Apricot Jam
Every year, I make apricot jam. It is a recipe from Alice Waters' beautiful book Chez Panisse Fruit. I tweaked the recipe for the jam, which I use when I bake, over ice cream, and perhaps a spoonful all by itself.

Apricot Galette
With my surplus apricots, I made a delicious galette using my blueberry galette recipe. It uses almonds in the dough and for the bottom of the crust. This is an easy recipe that can be made with different fruits such as plums, peaches and more.
I happened to have some olalliebeeries that I added to my apricots.

My German apricot cake (Aprikosenkuchen} has always been well-liked and will be a real treat with the roasted apricot sorbet. The added marzipan in the cake really does the trick.

Apricot dumplings Marillenknödel
The apricot dumplings are my personal favorite because I happen to love dumplings. They are called Mariellenknödel​ in Austria and are considered a delicacy.
​It is not just a dessert, it is a whole meal.

We do have an abundance of fruits and vegetables here in California but a lot of orchards have been replaced by houses.

We are huge apricot fans too and love this post with so many treats! Your ice cream looks so darn good and so full of lovely fruits. We are loving the stone fruit season and will be sad when she is gone.

It is “apricot bliss” season here in Arizona, too. I have been cooking with them, putting them up, and simply eating them for dessert! So incredible! Your sorbet looks like a great way to use them! And roasting then? Brilliant!

One of the reasons I started my blog was I wouldn't lose recipes also! Easy to do, isn't it? Apricots are good -- one of my favorite summer fruits. Although there are so many good ones, I'm not sure I have an actual favorite! I love roasting fruit, but have never roasted apricots before. I should, and make this wonderful looking sorbet! Really nice -- thanks.

Having my blog takes the guesswork out of my cooking. I like that! I froze some of my roasted apricots, I peeled them before freezing. I can’t wait to use them and see how they turned out.

Oh my goodness Gerlinde - or should I say apricot-goodness! You have the most gorgeous array of delightful and interesting recipes. Love that jam and wish I was your neighbor so you could share it with me, and so I could have that view in my backyard! The sorbet is speaking to me so it's going on my list. My, that's a LOT of apricots you've got there... While I'm sure the ice cream would be great, the sorbet sounds even more delightful to me. May try it quite soon, once I break out my ice cream maker.

The California apricots should be in stores around the country. Maybe they don’t sell well and that’s why they don’t have them.

I love apricots too but nice was a hard to find here in the Midwest. One of my favorite jams in apricot. What a wonderful abundance you have and the galette looks heavenly!

Wow, look at that view! I'm not sure if I'm more enthralled by the coastline view from your back porch or all of those jars of apricot jam. :-) I'm jealous of those huge crate of apricots! It looks like you've been having a wonderful apricot-y week so far...and this sorbet sounds delicious!
